quick bite: greek salad


I've spent the last 31 years of my life despising olives.  I would even try them from time to time just to make sure I still hated them.  And yep ... still hated them.

Then, about a month ago, I was looking to change things up a bit and randomly ordered a Greek salad at a restaurant.  Turns out, that's how olives are meant to be eaten.  It was a completely new combination of tastes for me, and I've been hooked ever since.  Best part?  It's a super easy way to change up a boring old salad at home.

My favorite combination for a Greek salad:
butter lettuce
cherry tomatoes from a friend's garden
tiny (or garden fresh) cucumbers
a mixture of black and green olives
feta cheese
balsamic vinaigrette or Greek dressing

Optional ingredients that I just haven't gotten around to getting:
pepperoncinis
artichoke hearts

Mix it all together, try something new and enjoy!
