quick bite: ricotta pasta


I love to eat and preferably, to eat healthy.  That said, I'm not a big fan of cooking.  Obviously, I manage, so I thought I'd share a few of my quick, easy and healthy concoctions.  Be warned, I'm no cook.  Everything I make is usually one serving, in one pot with as few ingredients as possible.  But it's delicious, convenient and works for me!

Ricotta Pasta:
whole wheat pasta
cherry tomatoes
spinach
ricotta cheese (I use fat free)
feta

Boil the pasta normally.  Just before it's done, throw a handful or two of spinach in the water.  Once is cooks, drain the pasta and spinach.  Throw it back in the pan and add sliced cherry tomatoes and 1/4 -1/3 cup of ricotta cheese.  Mix it all together, throw it in a bowl and sprinkle a bit of feta (or Parmesan) on top.  Lastly, enjoy!
