Back in July, John and I decided to stop eating meat. Technically, he decided, and then a couple of weeks later, I decided to follow in suit. He stopped eating meat to help him focus on a healthier diet. I stopped because I don't like it enough to cook it for just myself. For me, it's served more as a change of pace. I don't have any strong ethical reasons for the change, but I do find it much, much easier (and cheaper!) to cook without having to worry about the buying, prep and cleaning of meat. It's also made me think outside the box in terms of protein consumption and just overall variety in my eating routine. And there's something to be said for knowing exactly what's in your food!
So far, I haven't really missed meat at all. Once and while, I think about the things I'll probably never eat again, but for the most part, they are things I only eat once or twice a year anyway. If that!
So, what have I been eating? Here's a little peak:

| Eggplant Meat(less)balls over Spaghetti Squash - I actually own made this in ball form once, and it took forever! Since then, I've been using the mixture to stuff red peppers instead. Delish! |

| These things are amazing and nothing short of a godsend on busy days! |
